  11. Couper les pêches en petits morceaux (en conserver trois pour le décor) ajouter les morceaux de pêches dans la crème mélanger délicatement.
  12. Verser la crème dans le moule sur le fond biscuité enfourner pour 1 h en baissant le thermostat à 160 degrés.
  13. Couper les pêches restantes en tranches réserver.
  14. Laisser le cheesecake dans le four éteint 1 h porte fermée à la fin de la cuisson puis le laisser refroidir à température ambiante.
  15. Une fois refroidi le couvrir d une feuille d aluminium et le placer au réfrigérateur pendant 12 h.
  16. Enlever le papier aluminium et le cerclage du moule.
  17. Utiliser deux plats pour le démouler (le retourner sur un plat ôter le fond du moule puis le remettre à l endroit).
  18. Ajouter les tranches de pêches réservées.
