  1. Préparer les deux cercles de biscuit dacquoise : montez les blancs en neige, quand ils sont bien mousseux rajouter le sucre en poudre et continuer de battre jusqu'à ce qu'ils soient bien fermes.
  2. Verser dessus le sucre glace et la poudre d'amande tamisés puis la vanille. Mélanger délicatement a la Maryse. S'il reste des morceaux ce n'est pas grave. Il ne faut pas faire retomber les blancs.
  3. Mettre en poche et former deux cercles égaux de pâte. Saupoudrez dessus un peu de sucre glace. Enfourner 15 min a 180, four préchauffé.
  4. Faire les deux crèmes pâtissières. Voir les autres recettes. Ajoutez 2 feuilles de gélatine essorée pour chaque crème.
  5. Faire la crème au mascarpone : battre les jaunes et le sucre, ajouter le mascarpone et l'arôme amande amère. Ajouter cette préparation moitié dans la crème vanille, moitié dans la crème au café.
  6. Pocher les deux crèmes sur le premier biscuit, puis recouvrir avec le deuxième. Saupoudrez de chocolat noir.
  7. Terminer le décor du dessus s'il reste de la crème. Mettre au frais avant de déguster.
